Tomato Pine Nut Salad

My mom makes this Tomato Pine Nut Salad all the time for holidays and when we have people over, so I started making it for when I have people over! All of my friends love it!

This simple recipe can be doubled or tripled for a crowd! It’s a real crowd-pleaser and pairs well with any grilled protein during any season. I personally love enjoying this easy salad in the winter with a steak or grilled chicken! You can prep it or take it on the go in a Stasher bowl.

I N G R E D I E N T S

Salad:

  • 1/3 cup toasted pine nuts (any nuts work or sunflower seeds if you have a nut allergy)

  • 1-2 bunches parsley, chopped

  • 2 pints grape or cherry tomatoes, halved

Dressing:

  • ¼ cup olive oil

  • ¼ cup balsamic vinegar

  • Salt and pepper to taste

I N S T R U C T I O N S

  1. Preheat oven to 350

  2. Toast nuts on a rimmed baking sheet, tossing halfway through, until golden brown (about 5-7 minutes)

  3. Once toasted, let the nuts cool

  4. Combine pine nuts, parsley, and tomatoes in a large bowl and put to the side

  5. Combine dressing ingredients in a smaller bowl

  6. Before serving, add dressing to salad and toss
