Spicy Shrimp Salad

This salad is amazing! I eat it a few times a week for lunch or dinner! It’s also great if you want to prep all of the ingredients ahead of time! The dressing is spicy, but can totally be minimized if you aren’t into very spicy flavors!

I love using the red Argentinian frozen uncooked shrimp from Trader Joes! They are already clean and deveined and defrost fairly quick.

A few other things…if you aren’t into shrimp, this can easily be done with my Perfectly Cooked Chicken Breast or no protein at all. I found that using the canned mandarin was a great shortcut, but because it has added sugars I decided to rinse and drain them, and that does the trick! The dressing quantities listed below make about a 1/2 cup of dressing. To put that in perspective- one head of iceberg lettuce is enough for 2 large personal salads.

I N G R E D I E N T S

Salad:

  • iceberg or romaine lettuce, chopped

  • grape or cherry tomatoes, halved

  • cucumbers, chunks

  • avocado, chunks

  • cilantro, chopped

  • hearts of palm

  • black or white sesame seeds

  • canned mandarins (rinsed and drained) or fresh orange segments

  • raw shrimp (see directions for cooking method)

  • avocado oil (spray is great)

  • salt and pepper

Dressing:

  • 3 tablespoons mayo

  • 1/4 cup coconut aminos

  • 1 tablespoon sesame oil

  • 2 tablespoons sriracha

  • salt and pepper

I N S T R U C T I O N S

  1. Preheat broiler and cast iron pan. If you don’t have a cast iron pan use any sheet pan or ovenproof pan. Let pan preheat while you prepare the salad and dressing.

  2. While the pan and broiler are preheating, prep salad ingredients.

  3. Place salad ingredients in a large bowl. Set aside.

  4. Mix dressing ingredients together. Blend for ultimate smoothness. Set aside.

  5. Dry the shrimp with a paper towel.

  6. Carefully take out the pan from the broiler, and spray the hot pan with avocado oil, about 1-2 teaspoons.

  7. Place shrimps on the hot pan and sprinkle with salt and pepper.

  8. Broil shrimps for 5 minutes.

  9. Take out shrimps and chop. Add to the salad bowl.

  10. Drizzle dressing over salad. Sprinkle with sesame seeds before serving.
