Roasted Sweet Mini Peppers

This might be the easiest yet tastiest recipe ever! It’s almost NOT a recipe!

These sweet mini peppers are accessories to about everything you can think of..pizza, eggs, pasta, tacos, toast, buddha bowls, grill cheese, savory oats, burgers (even my Sweet Potato Lentil Turmeric Burgers) and the list goes on and on! I usually am able to find them at Trader Joe’s and Whole Foods. Next time you are in the market, grab a bag and make these…I can’t wait to see what dishes you use them in!

I N G R E D I E N T S

  • 1 bag of organic sweet mini peppers

  • Himalayan Pink Salt

  • any high heat oil spray (ghee, avocado, coconut)

I N S T R U C T I O N S

  1. Preheat oven to 400 degrees.

  2. Place washed and dried peppers on a parchment lined baking sheet.

  3. Spray with oil and sprinkle with salt.

  4. Place in the oven to roast for 30 minutes and then flip each pepper carefully.

  5. Roast for another 20-30 minutes until caramelized and fragrant.

  6. Enjoy right away or store in an air-tight container to use at a later date. Can be eaten warm or cold.
