Coconut Curry Delicata Squash

Finally getting around to posting this recipe for Coconut Curry Squash!!

It’s only 5 ingredients! Vegan, Paleo and Gluten Free!!

Dish with Coconut Curry Delicata Squash

I N G R E D I E N T S

  • 3 Delicata Squash

  • 4 tablespoons melted coconut oil

  • 1.5 teaspoons curry powder

  • 1-2 teaspoons pink salt

  • 1/4 cup coconut shreds

I N S T R U C T I O N S

  1. Preheat oven to about 375 degrees.

  2. Cut 3 delicata squashes in half lengthwise, de-seed scraping the inside with a spoon and cut into half moon shapes.

  3. Place melted coconut oil, curry powder, salt and coconut shreds into a bowl over cut squash. If necessary, add more seasonings to your taste.

  4. Mix to combine with your hands.

  5. Place seasoned squash on a parchment lined baking sheet and roast for about 20 minutes.

  6. Flip squash and then roast again for another 20 minutes, until browned.

  7. Enjoy!
