Edamame Dill Rice

I N G R E D I E N T S

  • olive oil

  • 1/2 of an onion, chopped or 1/2 of a package pre-chopped onion

  • 1 teaspoon salt

  • 1 cup of frozen shelled edamame (you can also use frozen lima beans, but they don’t sell this at TJ’s)

  • 3 tablespoons fresh dill, chopped

  • 1 cup basmati rice (white or brown, cooking times may differ)

  • 2 cups water

I N S T R U C T I O N S

  1. Place olive oil, onions and salt in a pot and simmer until the onions are fragrant and translucent over medium heat, about 5 minutes.

  2. Add in the edamame, rice and dill and stir to combine well.

  3. Add the rice and water, let water come to a boil and stir to combine.

  4. Lower the flame and simmer rice with a cover for about 15-20 minutes, until the water is absorbed and rice is fluffy.

  5. Turn off fire and let rice sit covered until ready to serve.

NOTE: if you want to make this dish whole30 & paleo compliant, omit the edamame/lima beans and use the Trader Joe’s fresh or frozen cauliflower. Do not use water. Follow step 1 and then add dill and cauliflower and sauté until cauliflower rice is cooked to your liking. You can use a little water to help it along.
