Dinner on a Budget - A Complete and Healthy Trader Joe's Meal
Let’s get right to the point…Trader Joe’s is basically the best thing since sliced bread, right??
For the most part they sell everything one would want or need to fill a basic kitchen! They have reasonable prices too! And the staff is just the friendliest. Because I love it so much I created a complete meal using only products that can be found at Trader Joe’s.
It’s definitely a quick easy weeknight dinner, great for meal prep and can be made to work for whole30 and paleo friendly diets too! Even kids will love it! Let’s dig right in…I’ve divvied up the recipes: 21 Salute Dover sole, Edamame Dill Rice & Roasted String Beans. I have a Creamy Vegan Butternut Squash Soup recipe too, that would be a great appetizer for this meal. You can find that in this post!
2 1 S A L U T E D O V E R S O L E
Ingredients
1-2 packages of frozen dover sole (depending on how many people and pieces are in each, they vary in size and weight)
olive oil spray
21 salute seasoning
1 lemon
parchment paper or foil (optional, not sold at Trader Joe’s – although that would be cool if they did)
Instructions
Defrost fish in its package in the fridge overnight, or the day of in a cold bowl of water a few hours before cooking.
Rinse and pay fish fillets dry.
Place oven rack close to the broiler and preheat to high.
Place a piece of parchment paper or foil on a sheet tray and lay the fillets down.
Spray fish fillets with olive oil.
Cut lemon in thin slices, using only half of it. Use the remaining 1/2 to squeeze over the fish.
Season the fish with the 21 Salute seasoning (it can be peppery, so be aware)
Broil on high for about 10-15 minutes until top is golden brown and fish is opaque. Again depending on how thin the fillets are it could be quick.
B R O I L E D H A R I C O T V E R T
Ingredients
1-2 packages of fresh haricot vert (depending on how many people)
olive oil spray
salt
parchment paper or foil
Instructions
Preheat broiler to high.
Place washed and trimmed haricot vert on a lined sheet pan, so that they are not touching or overlapping.
Spray the string beans with olive oil spray and sprinkle with salt, to taste.
Broil for about 10 minutes until browned, as pictured above.
E D A M A M E D I L L R I C E
Ingredients
olive oil
1/2 of an onion, chopped or 1/2 of a package pre-chopped onion
1 teaspoon salt
1 cup of frozen shelled edamame (you can also use frozen lima beans, but they don’t sell this at TJ’s)
3 tablespoons fresh dill, chopped
1 cup basmati rice (white or brown, cooking times may differ)
2 cups water
Instructions
Place olive oil, onions and salt in a pot and simmer until the onions are fragrant and translucent over medium heat, about 5 minutes.
Add in the edamame, rice and dill and stir to combine well.
Add the rice and water, let water come to a boil and stir to combine.
Lower the flame and simmer rice with a cover for about 15-20 minutes, until the water is absorbed and rice is fluffy.
Turn off fire and let rice sit covered until ready to serve.
NOTE: if you want to make this dish whole30 & paleo compliant, omit the edamame/lima beans and use the Trader Joe’s fresh or frozen cauliflower. Do not use water. Follow step 1 and then add dill and cauliflower and sauté until cauliflower rice is cooked to your liking. You can use a little water to help it along.
