Vegan Edamame Cilantro Dip

Who needs guacamole when you can have this Vegan Edamame Cilantro Dip?!?! This dip is perfect for picnics, bbqs, sandwiches or just as a dip with crudites.

It pairs perfectly well with Simple Mills almond flour sea salt crackers!! Simple Mills crackers are filled with all the healthy fats to keep you full plus you have the edamame for some clean plant-based protein, that you don’t usually get when eating straight up guac! I N G R E D I E N T S

  • 1 cup cilantro (about a handful)

  • 1 tsp garlic, minced

  • 1 small container of plain non-dairy yogurt

  • 1 lemon, juiced (~2-3 tbsps)

  • 2 tbsp olive oil

  • 1 tsp salt

  • 1 tsp ground coriander

  • 1 tsp ground cumin

  • 1 tsp aleppo or red pepper (optional)

  • 1/2 cup vegan cream cheese, herbed or chive flavored

  • 1 cup shelled edamame, boiled & chilled

I N S T R U C T I O N S

  1. Blend all ingredients in food processor until smooth!

  2. Scrape down the sides after about 3 minutes then mix again. About 5 minutes total.

  3. Taste and adjust flavors as needed. Makes about 2 cups.

  4. ENJOY with Simple Mills Almond Flour Crackers.
