One Pot Taco Pasta

This One Pot Taco Pasta is a great recipe to add to your weekly meal plan! It’s perfect for all members of the family because it’s not too spicy, is dairy-free and it counts as a serving of veggies! 🙌🏻 Feel free to make this gluten-free by subbing in your favorite GF pasta!

This recipe reminds me of my childhood. I never grew up eating tacos but growning up in an Israeli household my mom always cooked with spices like paprika, cumin, and coriander. She used to make a meat pasta sauce for us that had similar flavors to this taco pasta and it immediately brought me back.

This is a super simple recipe with options to add in more flavor depending on what your family likes.

I N G R E D I E N T S

  • 1 cup chopped onion

  • 2 poblano peppers (or green peppers or canned chilis), chopped

  • 4 cloves garlic, chopped

  • 1 pound pasta shells (or other shape you love)

  • 1 tbsp olive oil

  • 1 pound organic ground turkey or grass-fed ground beef

  • 1 jar of your favorite red salsa

  • 1 cup canned tomato sauce (you can also sub in your leftover marinara that’s sitting in your fridge right now 😉)

  • 2 tbsps tomato paste

  • 1 tbsp chili powder

  • 1 tsp oregano

  • 1 tsp cumin

  • 1/2 tsp cayenne (optional for extra 🔥)

  • 1-10oz bag of frozen peas

  • cilantro (again, optional, but adds flavor)

I N S T R U C T I O N S

  1. Bring a large pot of water to a boil. Meanwhile chop your pepper, onion and garlic and set aside.

  2. When the water is boiling pour in the pasta and cook until it’s al dente or undercooked slightly. Drain and set aside in colander.

  3. In the same pasta pot add your onions, peppers & garlic with olive oil and sauté until softened, about 5 minutes.

  4. Next, add in the ground beef or turkey and sauté into crumbles.

  5. Add in salsa, tomato sauce, tomato paste, & seasonings and stir to combine.

  6. Add in drained and cooked pasta.

  7. Add in frozen peas and cilantro, if using.

  8. Mix to combine, taste and adjust seasoning as needed. You may want to add a bit of salt.

  9. Enjoy all week long!

N O T E S

  • You can keep the pasta separate from the sauce if you’d rather. If you plan to do it this way be sure to add in your peas and cilantro, if using, with the meat mixture. Store the meat mixture and pasta separately.

  • The meat mixture itself is freezer-friendly. I love to freeze sauces and stews in a Stasherbag or in Souper Cubes!
