Matbucha

Matbucha is a delicious tomato and bell pepper sauce with a little bit of spice and a lot of flavor!

It can be enjoyed with pita or challah, as a condiment, as a sauce for eggs (similar to a shakshuka) or my favorite, Salmon with Matbucha and Feta.

I N G R E D I E N T S

  • 2-3 red bell peppers, chopped

  • 1 (15oz) can diced tomatoes

  • 8 cloves of garlic, sliced or minced

  • 1⁄2 cup good olive oil

  • 1-2 tbsps paprika

  • 2-3 jalapeños, chopped

I N S T R U C T I O N S

  1. Cut red peppers into strips, chop garlic, and jalapeños.

  2. Saute red peppers and add remaining ingredients.

  3. Lower heat, and let simmer until ingredients cook down, about 1 hour or so, the longer the better.

  4. Once peppers and tomatoes have cooked down, use a masher or large fork to mash ingredients.

  5. Cook until most liquid has evaporated and resembles an oily jam.

  6. Matbucha can be frozen or served chill with challah or pita bread. Use as a condiment, with eggs, or in my Salmon with Matbucha and Feta dish.

Enjoy! There are so many ways to enjoy Matbucha, and you can make it as spicy as you like - just add more jalapeños!
