Dairy-Free Herbed Salmon Salad

Do you love salmon? Do you love herbs? Do you like a little spice in your life? Do you dislike mayonnaise? If you answered YES to all of these questions, I have the perfect recipe for you!

My DF Herbed Salmon Salad is perfect for #mealprep, #leftovers, your #nosaddesklunch or #toasttuesday!! It’s #dairyfree, contains minimal ingredients and #paleofriendly! You’re gonna wanna save this post for the next time you have some leftover salmon in the fridge! Or just go buy some on your way home from work and have a batch ready for the weekend!!! So good! Enjoy!

I N G R E D I E N T S

  • 12 oz of cold cooked salmon, mashed in a bowl

  • 1/4 cup unsweetened plain vegan yogurt (any kind works)

  • 1 lemon, juiced

  • 1/4 cup loosely packed chopped fresh cilantro

  • 1/4 cup loosely packed chopped fresh parsley

  • 1/4 cup loosely packed chopped fresh dill

  • Red pepper flakes, to taste

  • Salt, to taste

I N S T R U C T I O N S

  1. Place all the ingredients except the yogurt & salmon in a mini food processor (or blender). Pulse until blended.

  2. Add the yogurt to the herb mixture in a bowl and mix to combine.

  3. Reserve half of the herb yogurt mixture in a small container and use it another time or you can make double the salmon (24 oz of cooked salmon) and use it all. I keep mine in the freezer.

  4. Add the mashed salmon to the herb yogurt mixture. Mix to combine and taste for seasoning. Adjust as necessary.

  5. Enjoy on a salad, on toast, with plantain chips, pepper slices, cucumber slices, veggie chips or beet chips!
