Creamy Vegan Butternut Squash Soup

This recipe is so simple, and only requires 6 ingredients, including the salt and oil!! Do you believe it?? You should!!

I’ve made this soup for a long time now…since 2003 when I first moved into the city. I think it’s my friends’ favorite soup that I make. It’s really healthy too! Perfect if you are following a whole30 or paleo diet and makes a great meal prep staple! It also freezes well. It is a great addition to my Complete & Healthy Trader Joe’s Meal that I created too! You will notice that I added some additional optional ingredients if you want to give it a little twist, feel free to customize to your liking. I always love adding some fresh chopped cilantro as a topping, but you can also blend it in. The world is your oyster!

Eating Butternut Squash Soup

I N G R E D I E N T S (makes about 11 cups)

  • 4 tablespoons olive oil

  • 1 large onion, chopped or 1 package pre-chopped onion from Trader Joe’s

  • 3 cloves of garlic, chopped

  • 1 inch of fresh ginger, minced (optional)

  • 2 teaspoons of salt

  • a few grinds of black pepper

  • 2 bags of peeled and cut up butternut squash

  • 1 box of Vegetable stock (can use chicken too if you aren’t vegan)

  • 1 can of coconut milk (optional)

  • other ingredients you can add: turmeric, curry, carrots, sweet potato, cilantro, chives, parsley

I N S T R U C T I O N S

  1. In a large soup pot, place the olive oil, chopped onion, garlic, ginger (if using) salt and pepper over medium high heat, and sauté about 10 minutes or until soft.

  2. Add the 2 bags of butternut squash and then fill the pot with 1 box of stock, or until the squash is covered. *If you are wanting to use coconut milk add that in first and then add the stock until the squash is just covered.

  3. Let the pot come to a boil and then simmer with a lid on low-medium heat for about 30-40 minutes.

  4. When the squash becomes soft and mushy, turn the heat off and use an immersion hand blender or Vitamix blender to puree the soup.

  5. Taste and adjust flavors to your liking.

  6. Sprinkle with chopped chives, cilantro, or parsley (if you desire some greens) and serve.

  7. Enjoy!!
