21 Salute Dover Sole

I N G R E D I E N T S

  • 1-2 packages of frozen dover sole (depending on how many people and pieces are in each, they vary in size and weight)

  • olive oil spray

  • 21 salute seasoning

  • 1 lemon

  • parchment paper or foil (optional, not sold at Trader Joe’s – although that would be cool if they did)

I N S T R U C T I O N S

  1. Defrost fish in its package in the fridge overnight, or the day of in a cold bowl of water a few hours before cooking.

  2. Rinse and pay fish fillets dry.

  3. Place oven rack close to the broiler and preheat to high.

  4. Place a piece of parchment paper or foil on a sheet tray and lay the fillets down.

  5. Spray fish fillets with olive oil.

  6. Cut lemon in thin slices, using only half of it. Use the remaining 1/2 to squeeze over the fish.

  7. Season the fish with the 21 Salute seasoning (it can be peppery, so be aware)

  8. Broil on high for about 10-15 minutes until top is golden brown and fish is opaque. Again depending on how thin the fillets are it could be quick.
