Poached & Shredded Chicken

I N G R E D I E N T S

  • 1 pound chicken tenders or chicken breast cut into smaller strips

I N S T R U C T I O N S

  1. Place raw chicken in a medium size pot and fill with cold water, enough to cover the chicken completely.

  2. Place pot over medium heat on the stove and let simmer for about 20-25 minutes. Time will very depending on size of your chicken.

  3. Once the chicken is cooked, drain and let them cool.

  4. Shred the chicken using your hands. Two forks or a hand mixer work too but I find my hands the quickest and easiest.

  5. Add to salads, tacos, taquitos, soups, quesadillas, chicken salad, fried rice, pastas, chicken pot pie, dumplings, egg rolls etc. The options are endless.
