Roasted Sweet Potatoes

Since doing my whole30 I’ve been on a sweet potato kick! Below is my recipe for simple roasted sweet potatoes!

I have been enjoying them weekly as part of my breakfast or a snack! And since I’ve been traveling so much lately it’s also been my airplane snack! I always travel with a packet of nut butter too and it’s all TSA approved!

I N G R E D I E N T S

  • Olive Oil Spray or Olive Oil

  • Parchment Paper

  • Sweet Potatoes, peeled and sliced into wedges

  • Salt

  • Optional other seasonings: dried parsley, onion powder, pepper, Garlic Salt, Ground Cinnamon

I N S T R U C T I O N S

  1. Preheat your oven to 375 degrees.

  2. Peel, wash and cut your sweet potatoes into wedges, as pictured.

  3. Cover sheet pan with Parchment Paper.

  4. Place wedges on pan and spray liberally with Olive Oil Spray.

  5. Sprinkle salt and whatever seasonings you want on your potatoes.

  6. Set time for 20 minutes, flip potatoes to the other side and set timer for another 20 minutes. Times may vary depending on how thick you cut the potatoes and how hot your oven gets. You can also use the roast setting on your oven if you have one.

  7. Enjoy!
