Easy Sourdough Pizza Dough
Now that I basically only eat foods that contain #sourdough, I think you will be seeing a lot more pizza content! Iβm 100% okay with that decision!! WHAT ABOUT YOU!??
I watched @teddywolff share a recipe for #sourdoughpizza on his Instagram the other day. Obviously, I had all the ingredients so went ahead and made some! You can even use this dough to make pitas and bialys! I made a few additions to the recipe and it even works if using unripe starter, aka your sourdough discard.
I N G R E D I E N T S (makes enough for 3 large pizza pies)
200 grams mature starter
650 grams filtered water
25 grams salt
12 grams of organic cane sugar
60 grams extra virgin olive oil
500 grams unbleached all purpose flour
500 grams bread flour

Mix all ingredients together in a large bowl with a spatula & knead until you get a shaggy dough and no dry bits.
Let sit in the bowl covered with plastic wrap and a towel for 2 hours.
Perform the stretch and fold method in the bowl 3-4 times around and then let the dough rest again (covered) for another 30-45 minutes.
Heavily flour your surface as well as the top of the pizza dough.
Divide the dough into 3 large even balls (~625 grams each).
Shape a ball each ball of dough into a smooth taught ball and let rest on the counter for 15 minutes.
At this point you can place the dough balls in an oiled container and keep in fridge for up to 3 days OR wrap each ball in plastic wrap and freeze.
To make crust: use room temperature dough to form your pizza crust, let rest for 15 minutes and then shape again and top!
Bake at 450 for about 20 minutes on a upside down sheet tray or pizza stone.
ENJOY!
