Birthday Cake Banana Bread

I N G R E D I E N T S (makes 1 loaf)

  • 1/2 cup coconut sugar (any sugar works)

  • 1 tsp vanilla extract

  • 1 tsp almond extract

  • 1 tbsp vanilla bean paste, optional

  • 2 large eggs

  • 3 ripe bananas, mashed

  • 1/2 cup melted coconut oil (or avocado or light olive oil)

  • 1/4 cup milk (any kind)

  • 1 tsp baking soda

  • 1 cup flour (see notes)

  • 1/2 cup colored sprinkles

I N S T R U C T I O N S

  1. Preheat oven to 350.

  2. Place all ingredients, except for the sprinkles, in a mixing bowl and mix to combine!

  3. Add in the sprinkles and mix.

  4. Pour batter into a parchment-lined and greased loaf pan.

  5. Tap the pan on the counter to even out the batter.

  6. Top with more sprinkles if you desire!

  7. Bake for 55-60 minutes or until a toothpick comes out clean.

  8. Let cool before slicing.

  9. Enjoy!

N O T E S

  • I have tried using Bob’s Red Mill GF flour, all purpose flour, cup 4 cup gluten free flour for this recipe. I think oat flour or even cassava flour would work just as good! Give it a try and leave a comment below so I can share your feedback with everyone!
