"NYC's Carbone Style" Vegan, Paleo & Whole30 Spicy Tomato Sauce

This might be the easiest and most delicious pasta sauce ever! And it’s vegan, paleo and whole30 approved!

If you have ever been to NYC and have eaten at Carbone, this is a copycat recipe that I created because I just can’t afford to pay for an overpriced pasta dish more than one or two times a year! LOL!! Even if you haven’t been to Carbone, this is a must make recipe! It can be eaten with fish, chicken, pasta, veggie noodles, pizza or any which way you see fit! GO FOR IT!!! ENJOY!

I N G R E D I E N T S

• 1 box pasta of choice (or veggie noodles if on a paleo/whole30 diet)
• 3 tablespoons extra virgin olive oil
• 4 cloves of garlic, chopped
• 4 large shallots, sliced (more onions = more flavor)
• 1/2 tsp pink salt
• 1/2-1 tablespoon red pepper flakes (depending on how spicy you want it)
• 1/4 cup tomato paste
• 1/2 cup raw cashews
• 1 cup filtered water
• 1 cup reserved pasta water

I N S T R U C T I O N S

  1. Bring water to a boil for the pasta in a large pot. (If using veggie noodles, cook them briefly right before serving.)

  2. Meanwhile, prep shallots and garlic and add into a sauté pan with olive oil, salt and red pepper flakes but do not turn stove on yet.

  3. When the pasta water comes to a boil add pasta, cook according to directions to the box.

  4. Reserve 1 cup of the pasta cooking liquid and set aside.

  5. Drain pasta (rinse if using lentil or chickpea pasta with cold water to stop the cooking) and set aside.

  6. Turn on sauté pan with shallots and garlic mix to a medium heat.

  7. Sauté and stir with wooden spoon until softened, about 7-10 minutes. Lower heat and add in tomato paste, stir to combine.

  8. Meanwhile, in a high powered blender blend raw cashews with 1 cup filtered water, until smooth (2 min) to make cashew cream.

  9. Add cashew cream into sauté pan and stir until incorporated. Slowly add in pasta water and continue to stir. At this point the sauce is ready. If you want a smooth sauce transfer tomato mixture back into the blender and blend until creamy. Taste and adjust seasoning if necessary.

  10. Pour over cooked pasta and enjoy!
