My Famous Lasagna

I N G R E D I E N T S
1 box lasagna noodles (oven-ready, no-boil, regular, or GF all work)
16oz ricotta cheese
16oz shredded mozzarella cheese
½ cup grated parmesan cheese, plus more for topping
1 egg, yolk only
1 pound cooked protein of choice or sautéed veggies, if using
32oz-40oz jar of marinara sauce
salt
pepper
italian seasoning
fresh basil, optional

I N S T R U C T I O N S
Preheat your oven to 375 degrees.
If using, no boil, GF, or oven-ready noodles, skip this step. Otherwise in your baking dish, place uncooked lasagna noodles and soak in hot water for 20-30 minutes.
Meanwhile, heat a pan and brown the protein of choice or sauté veggies, if using, and season with salt and pepper. If making plain lasagna skip this step.
In a medium bowl combine cooked protein or veggies, ricotta cheese, 1 cup of the shredded mozzarella, 1/2 cup parmesan cheese, egg yolk, and seasonings.
Take noodles out of the water and lay on a sheet tray or parchment paper.
Start the layering process with your sauce on the bottom of your pan, then noodles to cover the pan, then cheese mixture, and repeat until you are out of cheese mixture. You should have about 3-4 layers.
The very top layer should be noodles then sauce then a layer of reserved mozzarella cheese and extra parmesan cheese. Top with fresh basil if using.
Place a sheet of parchment then top with foil to seal the pan. At this step you can refrigerate or freeze the lasagna to enjoy later in the week or month.
From fresh, Place in the oven for 30 minutes covered, then uncover and bake for another 15 minutes, until golden brown on top.
From frozen, let lasagna come to room temp or thaw overnight in the fridge then follow step 9 to cook.
N O T E S
You can easily make smaller portions for your freezer so you have ready-to-eat lasagna on hand! I like to use the Souper Cube Stoneware Baking Dish or Souper Cube 2 Cup Freezing Tray to make smaller portions of lasagna. The best part is you can bake in either Souper Cube vessel. The frozen lasagnas will fit perfectly into the Super Cube baking dish for reheating at a later date! Alternately, you can also cook the lasagna in a full size dish, let it cool, and then wrap portions individually and store in a large Stasher Bag.
