Birthday Cake Banana Bread
I N G R E D I E N T S (makes 1 loaf)
1/2 cup coconut sugar (any sugar works)
1 tsp vanilla extract
1 tsp almond extract
1 tbsp vanilla bean paste, optional
2 large eggs
3 ripe bananas, mashed
1/2 cup melted coconut oil (or avocado or light olive oil)
1/4 cup milk (any kind)
1 tsp baking soda
1 cup flour (see notes)
1/2 cup colored sprinkles
I N S T R U C T I O N S
Preheat oven to 350.
Place all ingredients, except for the sprinkles, in a mixing bowl and mix to combine!
Add in the sprinkles and mix.
Pour batter into a parchment-lined and greased loaf pan.
Tap the pan on the counter to even out the batter.
Top with more sprinkles if you desire!
Bake for 55-60 minutes or until a toothpick comes out clean.
Let cool before slicing.

I have tried using Bob’s Red Mill GF flour, all purpose flour, cup 4 cup gluten free flour for this recipe. I think oat flour or even cassava flour would work just as good! Give it a try and leave a comment below so I can share your feedback with everyone!
