BBQ Chicken & Bean Taquitos
I love this recipe! It’s super simple and only requires a handful of simple ingredients.
Most of which you probably have in your home already! If you don’t have any BBQ sauce laying around you can easily make a batch of homemade sauce using ketchup and some spices. I like this recipe from The NY Times. I promise it’s very easy and you’ll save about $4 by not buying a bottle of BBQ sauce.
This recipe is easy to prepare when you meal prep and then it can be reheated easily throughout the week in a toaster oven, air fryer or oven. The taquitos can also be frozen. To reheat, pop them into a hot 400 degree oven on a lined pan, for about 10 minutes.
I N G R E D I E N T S (makes 10 taquitos)
1 pound raw chicken tenders (boneless skinless breast would work here too)
1 package of 8-inch flour tortillas (I like the Mission brand)
1 cup of your favorite BBQ sauce
8 ounces of Mexican style shredded cheese
1 can refried beans
Olive or avocado oil (spray works great!)
I N S T R U C T I O N S
Preheat the oven to 425 degrees F.
Place raw chicken tenders in a medium size pot and fill with water, enough to cover the chicken. Place pot over medium heat on the stove and let simmer for about 20-25 minutes.
Once the chicken is cooked, drain and let them cool.
Place BBQ sauce, the can of refried beans and the bag of cheese in a large mixing bowl.
Shred the cooked and cooled chicken using your hands and place in the bowl with the rest of the ingredients. Mix to combine.
Drizzle a baking sheet (or lasagna pan) with some oil to coat the bottom. Set aside.
Spoon ~3 tablespoons of the chicken mixture down the middle of the tortilla then roll up and place seam-side down on the baking sheet.
Spray or brush oil on the top of all the tortillas.
Transfer pan to the oven and bake for about 15 minutes or until the cheese has melted and the tortillas are crisp and lightly browned on the edges.
Enjoy warm with salsa and guacamole!
