Vegan Chocolate Cheesecake Bars

Chocolate, CBD & Mushrooms oh my! 🍫🍄😃 I know I’m late to the vegan cheesecake 🚂 but I have been wanting to make make these bars for a while now! These vegan bars are baked, not raw or frozen. They are rich in chocolate flavor but won’t make you feel like crap after! They are made with cacao powder, they contain lots of high quality CBD, a variety of adaptogens and lots of LOVE! I hope you will enjoy these bars as much as I do!

Vegan Chocolate Cheesecake Bars

Crust:
1 cup Love Grown Cocoa Goodness Clusters (or any granola you like)
4 tbsp coconut oil (I did 2 tbsp CBD coconut oil + 2 tbsp plain coconut oil)

Filling:
1 8oz container of plain dairy-free cream cheese
1 cup cashews, soaked for at least an house and then drained
1/2 cup cacao powder
1 tbsp coconut oil
1 pinch CBD tincture, optional (You can purchase that here.)
1 cup coconut cream
1 tbsp mixed mushroom adaptogens (I use this brand.)
1 tsp vanilla bean paste (I use this brand.)
1 tbsp tapioca flour
2/3 cup maple syrup
1/8 tsp pink salt

Instructions:

  1. Mix ingredients for crust in your food processor until finely chopped.
  2. Spread into a parchment lined brownie pan, 8×8.
  3. Bake 350 for about 15-20 minutes.
  4. While crust is baking, place all filling ingredients in your high speed blender. Blend until smooth.
  5. Pour filling into baking dish and bake at 325 for about an 1 hr, until cheesecake is firm.
  6. Allow to cool in the fridge for about 4 hours, or overnight.
  7. Once completely cool and firm, slice into squares!
  8. Enjoy with a glass of nut milk!
